Scallops ala Rob

 

1/2 lb. sea scallops
1 tbsp. olive oil
1/2 cup white wine
1/2 cup shallots, chopped
2 tsp. fresh parsley
1 tsp. lemon juice
Pepper to taste

1. Combine oil, wine, shallots, parsley, lemon juice, and pepper in large bowl.

2. Beat mixture to thoroughly combine ingredients.

3. With Clever, flatten scallops.

4. Marinate scallops in mixture for at least 60 minutes stirring every 30 minutes.

5. Grill scallops on Hot Stone.

Variation: for a thicker sauce - before grilling strain liquid from scallops; add 3 tbsp. cream and 1 1/2 tbsp. flour to liquid and mix thoroughly; replace scallops in mixture and grill as usual.
