Twice Baked Potato Soufflés
| 4 Baking Potatoes | |

1/4 cup shredded Colby Cheese |
|
| 1/4 cup shredded Monterey Jack Cheese | |
| 1/2 cup Chip Dip | |
| 2 Tbsp Bacon Bits | |
| Milk to desired smoothness |
1. Preheat oven to 375 degrees F.
1. Scrub 4 Baking Potatoes under warm water to remove any dirt.
2. Bake Potatoes to all but 10 minutes of doneness.
3. Dice hot Potatoes into a large mixing bowl.
4. Add shredded Colby and Monterey Jack cheese, bacon bits, chip dip, and milk to diced hot potatoes.
5. Beat mixture to desired smoothness adding milk if needed to help acquire optimum smoothness.
6. Spoon mixture into small oven safe soufflés cups.
7. Bake at 425 degrees F until top of mixture is golden brown (about 10 minutes).
